BETH'S PAVLOVA

 

PAVLOVA:

 

 

INGREDIENTS:

6 egg whites

2 cups of castor sugar

1 1/2 teaspoons of vinegar

1 1/2 teaspoons of vanilla essence

300gm container of full cream ( more may be needed)

1 punnet of strawberries

3 - 4 kiwi fruit

passionfruit

(other fruits can be used like grapes, peaches etc)

 

If using a gas oven, set to the highest temperature just as you start to beat the egg whites. Beat egg whites at full speed until they stand in peaks. Sprinkle a tablespoon of sugar into the egg whites and beat until it dissolves - keep doing this a tablespoon at a time until all is very well beaten in. Lastly, fold in the vinegar and then the vanilla essence carefully.

Draw a 7 inch circle on some greased cooking paper or aluminium foil and put on an oven slide. Heap the egg white mixture on the circle of paper.  Mould up the sides with a spatula and make a slight depression on the top to form a well-shaped meringue when cooked. Turn the heat to lowest temperature just before putting the Pavlova in the bottom of the oven and cook for 1 1/2 hours. Remove from the oven and leave until cold. When cool, spoon whipped cream high in the centre. Arrange kiwi fruit around the edge and place the strawberries nicely around. Put passionfruit and any other fruit you wish in the centre.

NOTE: If using an ELECTRIC OVEN, cook Pavlova at a low temperature in the coolest part of the oven for 45 to 50 minutes, turn off the heat and leave until the oven is cold.

 

 

This is another way to decorate a Pavlova.

You can use which ever fruits you fancy.

 

 

2 VERY QUICK DESERTS: APPLE CRUMBLE & EASY CHOCOLATE MOOSE

 

 APPLE CRUMBLE TOPPING:

 

3 ounces of butter

1/4 of a cup of brown sugar

1/2 a cup of coconut ( finely chopped walnuts can be used instead if you don't like coconut)

3/4 of a cup of self raising flour

 

Mix all ingredients together until it resembles coarse bread crumbs. Sprinkle over cooked apples or tinned apples ( tinned apricots can be used as an alternative).

Bake in a moderate oven until the topping is golden.

 

EASY CHOCOLATE MOOSE:

 

300gm good quality chocolate - melt in double boiler (blood temperature - test on lips)

500gm full cream - whip to soft peaks ( don't over whip)

200gm olive oil - add to chocolate

Pinch of sea salt

 

Add chocolate mix to cream and constantly whip until mixed.

Sprinkle a touch of sea salt on top.

 

* Don't put in fridge, make and serve immediately.

* Good quality chocolate is essential and a clean bowl.

 

 

BETH'S BANANA CUSTARD CAKE

 

Beth's Banana Custard Cake:

 

* Prepare the loaf tin with greased paper and sprinkle with flour for easier removal after cooking.

 

INGREDIENTS:

2 Bananas ( very ripe ones are best for flavour)

1 Cup of S.R. flour

Pinch of bi-carbonate of soda

3/4 of a cup of sugar

1 egg

2 ounces of margarine or butter

2 tablespoons of milk

Half a teaspoon of vanilla essence

Chopped walnuts (optional)

 

Mash the bananas in a bowl and mix the 2 tablespoons of milk - set aside.

Sift flour and soda together onto a plate and set aside.

In another bowl place the sugar, whole egg, vanilla essence and very soft butter - beat well.

Fold a couple of tablespoons of the flour into the bowl with the cake batter and mix well. Now add a couple of tablespoons of the banana and milk and mix well. 

Keep adding the flour and then the banana alternatively into the cake batter until it is all mixed in.

Mix in the nuts last - optional

Pour into a paper-lined, greased and floured loaf tin.

Bake in a moderate oven for 30 - 35 mins.

Test with a skewer - when it comes out dry it is ready.

 

 

 

ICED BANANA CAKE:

Mix 1 cup of sifted icing sugar with 2 tablespoons of very soft butter and 1 teaspoon of vanilla essence.

Spread over cooled cake and sprinkle with chopped walnuts or coconut if you prefer.

 

 

 

 

 

MELTING MOMENTS

 

 

 

These MELTING MOMENTS are light and delicious! Sorry for the old measurements, it's an old recipe:0

 

INGREDIENTS:

8 ounces of butter

2 ounces of icing sugar

4 ounces of corn flour

4 ounces of self raising flour

 

Cream the butter and sugar together until light and fluffy in consistency.

Add sifted flours and mix into the butter and sugar.

Put mixture in a piping bag  with a large star nozzle and pipe onto a greased baking tray.

Bake in a moderate oven for 10 mins and then let them cool.

 

FILLING:

1 tablespoon of butter

1 tablespoon of sweetened condensed milk

1 tablespoon of icing sugar

Half a teaspoon of vanilla essence

 

Mix all ingredients together well. 

When the biscuits are cold, join them together with the cream filling, like in the picture above.

 

 

 

 

EASY CHOCOLATE TRUFFLES

 

 

 

CHOCOLATE TRUFFLES is an easy recipe to make and is loved by children and adults

 

INGREDIENTS:

1 can of sweetened condensed milk

2 cups of crushed sweet biscuits

1 cup of cocnut

2 tablespoons of cocoa

extra coconut for rolling

 

Method:

Mix the crushed biscuits, cocoa and coconut together.

Add the sweetened condensed milk and mix very well.

Roll the mixture into balls (one at a time) and then roll in the extra coconut.

Put in an airtight container and keep in the fridge.

 

 

PLAY DOUGH

 

How to make your own home-made PLAY DOUGH  -  (no unknown chemicals! )

 

INGREDIENTS:

1 cup S.R. flour ( or plain flour and 1 sache of baking powder)

1 tablespoon oil

1 cup water

Half a cup of salt

1 tablespoon cream of tartar

Colouring of choice

 

Put all ingredients in a saucepan and stir over low heat until dough leaves sides of saucepan.

Store in an airtight container in the fridge.
